A little help from a seasoning mix isn't cheating.

Another soup, another Mama K classic. This minestrone isn't 100% homemade - getting a little help from a seasoning mix from Bear Creek. Make it your own by loading it up with fresh veggies of your liking and ground Italian sausage for a heartier soup.

Ingredients
1 packet Bear Creek minestrone soup mix
8-10 cups fresh or frozen veggies of your liking, roughly chopped (e.g. cauliflower, broccoli, green beans, corn, carrots, spinach)
1 lb ground Italian sausage (optional)
1 quart low sodium beef stock
1 quart water, to taste
Salt & pepper
Instructions
Combine soup mix with beef stock and water in a large pot, bring to a boil.
Roughly chop your veggies!
Add veggies and ground sausage if using, reduce heat to low, simmer for ~30 minutes, stirring occasionally.
Add salt & pepper to taste.
Serve on its own or as we did with a grilled cheese! :)
